Joey, Jarred and Dales Trip

Sunday July 12th
Today I fished with an ole friend and client Joey and his two friends Jarred and Dale. For some time now Joey and I have been working on booking a trip to where he could get his little friend Jarred who is 12 years old and his good friend Dale out on the water for some Speckled Trout and Redfish action, well today was the day!
We left the dock at Lafitte Harbor Marina around 6:00am and headed out for Barataria Bay area, the wheather looked pretty good for a good trout day, with the winds light out of the northeast and the water fairly calm. When we arrived at our first spot in the bay, we were the only boat in sight of the island we tried to fish the day before. I put the trolling motor over and we started casting H&H glow beetles over a shell reef that extends south of the island for a 100 yards or so. We started catching almost right away, so I put my Cajun anchor down and we caught 55 to 60 nice Speckled Trout until the tide slacked on us and the bite slowed to nothing. We only a very small tide range and it did not last but an hour or so and when the tide slacks, so will the bite on trout. I decided to move north to another island and try what we did the day before, I put a popping cork on and sure enough the bite was on like the day before. We caught many throw back trout under 12 inches, but did manage to catch a few nice keepers to add to the fish box. When the tide caught up to us and slacked, we took off into the shallow marsh to look for Redfish. Jarred said he wanted to catch a big Redfish, so I put the trolling motor over and we went back into a small shallow pocket where I have been seeing some Redfish tailing from time to time, and they were there. After a few cast Jarred had his hands full with a very nice Redfish pulling his line. We boated 10 really nice Redfish for a grand total of 72 Speckled Trout and 10 Redfish. This is New Orleans Fishing At Its Best!

The Howell Family Trip

Sunday May 24th was a great day on the water with the Howell family. My good friend and client Bubba Howell From Mississippi brought his wife Lynn, and their two boys Trey and Walter to Lafitte, Louisiana to go on a fishing trip with myself Capt. Scott Poche`, and what a great day we had. Trey caught the biggest Redfish of the day. He was casting a black and chartreuse Bayou Chub minnow when he caught his prize Redfish, and with a team effort we landed his trophy fish. He was very proud of his Redfish and remembered how many spots it had at the end of the day! Both of these young boys fished hard and enjoyed fighting 15 out of the 19 Redfish we brought back to the dock.
It was not an easy day today with the wind blowing and the water being dirty from the all the wind and rain we have been having the last few days. But we ended the day with 19 Redfish, 2 Black Drum and 1 lost Speckled Trout we caught in the shallow duck ponds, not a bad day for the conditions we were dealing with. I enjoy watching these young anglers faces when they have a Redfish on the line. I am glad I can be part of memories that will last them a lifetime. New Orleans Fishing at its Best!

May Coldfront Redfish

With a coldfront approaching Sunday May 17th, winds were light for the early part of the morning. I was hesitant to go very far from the marina, so I decided to head out to the Bayou Perot area to try and catch Redfish. The water was fairly clear and the bite was on! We caught 10 Reds on the first stop we made, and 10 more before a waterspout and the rain chased us back to the dock. We finished the day with 20 Redfish and 8 Black Drum, with releasing a few that were too big to keep. We have a good picture of the waterspout that touched down a few hundred feet from boat. That was a little scary but we stayed a safe distance and made it back safe. New Orleans fishing at its best!

The Girls First Trip

Even on the hardest fishing day of the year, we caught these nice Redfish. The wind was blowing northwest at 25 and gusting, and the temperature dropping into the 30’s. It did not change these girls mind about going fishing for the day. we still managed to catch a few nice Redfish, and one very cold Aligator we took a picture with and released him.

Matt Durham Bachelor trip

On May 2nd Capt. Chet and I had the pleasure of fishing with a great group of guys, Matt Durham, Mark Durham, Josh Durham, Billy Mc Millan, Philip Ingram and Rob Garner. It was Matt’s bachelor party trip and we had a successful day on the water catching Redfish. The wind was blowing 15 to 20mph, but we did not let it get the best of us. The bays were out of the question for catching Trout, so we slipped off into the shallow marsh to find clear water and hungry Redfish, and that we did! We ended the day with our limit of 20 Redfish and a few lonely Speckled Trout we caught by accident. Capt. Chet went off and sunk some shrimp on a jighead in his secret spot. They ended the day with a few limits of Reds, 1 Black Drum, 1 Sheepshead, and a mixed bag of fish, catching and releasing a bunch of Reds that did not quiet make the grade, but were fun to catch. All in all it was a great time. New Orleans Fishing at its Best!

Jim Smith trip

On May 7th, 8th and 9th Alden, Kory and Myself fished with a great group of guys Jim Smith,  Calvin Washinton, Bob Parrott, James Witherspoon, Derbert Dilworth, Joe Dunbar, Charles Guy and Ron Pope. We had three great days of fishing, even with the wind blowing 15 to 20mph. We caught limits of Redfish everyday, with a few Flounders and Speckled Trout to help fill our fish boxes. After three days of fishing we had 165 Redfish, 7  Flounder and 40 or so Speckled Trout.  This has been a very successful trip this year, with Mr. Dilworth catching the most Redfish for the trip, and my good friend Jim Smith finally catching more fish than me on the third day! New Orleans Fishing at its Best!

Redfish Courtboullion with Seafood Dirty Rice

Chef John Currence won the 2008 Great American Seafood Cookoff with this recipe.

Mississippi Redfish

1 Lb. Redfish, cut into two inch cubes
Courtboullion
½ cup raw bacon, chopped
1 cup yellow onion, diced
1 tablespoon garlic, minced
¾ cup red bell pepper, diced
½ cup green bell pepper, diced
3 cups okra, chopped
6 cups fresh tomatoes, chopped
1 lemon, zest and juiced
¾ cup white wine
1 cup fish stock
1 cup Shock Top beer
½ pound crabmeat
½ pound fresh shrimp, chopped
1 cup peanuts
3 cups + 3 tablespoons flour
1 ½ tablespoons Creole seasoning
2 teaspoons Tabasco sauce
3 tablespoons unsalted butter
salt and black pepper, to taste
Seafood Dirty Rice (recipe below)

To make the courtboullion: render the bacon. Add butter and 3 tablespoons flour and make a light brown roux. Stir in and saute the onions and garlic until tender. Add and saute the bell peppers. Stir in the okra and season with salt and black pepper. Add tomatoes and Creole seasoning and bring to a simmer. Stir in wine, lemon, and fish stock, and then bring to a boil.

Chop peanuts in food processor and blend with flour. Dust shrimp with peanut flour. In a separate saute pan, saute redfish and shrimp in butter, in batches until lightly browned. Add seafood to the courtboullion and cover. Add the crab after the seafood has been sauteed and added to the courtboullion. Simmer for 20 minutes. Season with salt, pepper, Tabasco, and Creole seasoning to taste. Serve over Seafood Dirty Rice.

Seafood Dirty Rice

½ cup bacon, chopped
½ cup chicken livers
½ cup shrimp, chopped
3 ½ cups fish stock
1 cup Shock Top beer
¼ cup onions, minced
1 tablespoon garlic
3 cups rice
2 tablespoons butter
¼ cup parsley, chopped
salt and black pepper, to taste

Cook off bacon. Add chicken livers and cook through. Remove, chop, and return to pan. Add shrimp and season with salt and pepper. Add onions and garlic and saute. Stir in rice, butter, and fish stock. Then pour the beer into the fish stock. Bring to a simmer. Cover and finish in 400º oven for 20 minutes. Season with parsley, salt, and pepper.

Brett’s Bachelor Party

This weekend we headed to Lafitte, LA to fish with Capt Scott Poche for Brett’s Bachelor Party. The weather was a question mark all week but the cold front stayed away long enough for us to get out Saturday morning to go catch 9 limits of redfish. The biggest was 30 inches and 10lbs. We left the Marina at 6:45 a.m. and we were back at the dock by 11:30 a.m. We had a very good day! Capt Scott put us on the redfish and we caught all our fish in one spot. What a blast.
